Our appetites primed, we then indulged in a rich and creamy confit duck egg. Paired with smoked onion, coppa, and summer truffles, each component enhanced the others, culminating in a complex flavour profile that left us eager for the next course.


Continuing our exploration, we were treated to Devon smoked eel, a dish that was nothing short of a revelation. Served with Jersey Royals, chive, and asparagus, the eel's tender and smokey quality harmonised wonderfully with the crisp freshness of the asparagus, offering a perfect balance on the plate.



Following the delightful starters, we moved on to the main courses, which proved equally impressive. Our first entrée, Cornish Texel lamb served with wild garlic, glazed tongue, pickled cockles, and sea herbs, was a triumph of British cuisine. The lamb was succulent and cooked to perfection, and the wild garlic and sea herbs lent a depth of flavour that was utterly satisfying.


Next, we savoured the butter-poached Cornish turbot, a dish that was as pleasing to the eye as it was to the palate. Presented with roasted white asparagus and tartare roe sauce, the turbot was flawlessly prepared – tender, flaky, and enriched by the subtly salty roe sauce that offered a delightful taste of the sea.


No dining experience is complete without dessert, and The Silver Birch truly delivered. We indulged in a pear and brown sugar tart served with gingerbread. The dessert was a sweet end to a gastronomic adventure. The pastry was the right balance of sweetness, with the gingerbread adding a warming spice.


And let's remember the non-alcoholic cocktails, which were as imaginative and refreshing as their food counterparts. Every sip was a testament to the thought and care that goes into every aspect of The Silver Birch's offering.
